Another stop in my search to add beer to food brought me to these rockin good Stout Marinated Steak Steak Tips. The recipe originally called for Guinness, but with the emergence of all these different Craft Breweries out there, you have so many more options with added flavors to make it a little more interesting.
For these I used a Cool Beans Coffee Stout made by Third Street Brewing. Avery easy process. Your going to need
2 lbs of Steak Cubed. I used a couple Round Steaks because they were on sale
2 Ounces of Soy Sauce
2 Ounces of Worcestershire Sauce
1/2 Cup of Molasses
1/2 Lb Brown Sugar – It seems like a lot, but it works out good!
1 Teaspoon Black Pepper
1 Teaspoon Crushed Red Pepper Flakes
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Can of Stout – Your Choice
Step 1 – Cube all of your steak into little bite sized squares.
Step 2 – Combine all the Ingredients into a large bowl and mix together. Slowly add in the beer and mix until you get a consistent flow.
Step 3 – Put meat hunks into the marinade.
Step 4 – Pour the contents of there bowl (Meat and Marinade) into a large ziploc bag. I would recommend Double bagging it and throw it into the fridge for at least 3 hours.
When you hit the 3 hour mark, I would head out and get that grilling cooking! Once my Lump Charcoal is ready to go, I pour it into a bed on one side and I place my Weber Grilling pan almost right above the coals. You will want this pan or some sort of similar heavy pan to do this. It makes grilling stuff like this super easy.
Once the pan has been over the coals for a bit and is pretty hot, go ahead and put the meat onto the pan. Try not to dump to much of the marinade onto the pan as it will just leak down and put your coals out. Normally with this pan, you can throw anything on it and not really worry about stuff sticking or burning, but with the sugar and molasses in the marinade, these babies will stick and burn pretty quick. Every minute or so, take a pair of tongs and slightly jostle the meat around. If you like a little crispness to them, go ahead and let that sugar caramelize.
The steak tips will only be on the grill for about 6 to 8 minutes. They cook pretty fast! Alone, these things would of been delicious, but I also made a really rockin Stout Sauce that I poured over them! So awesome! I will do the Sauce I made next! Give these a shot, you won’t be disapointed!

Nicely done Parker. Did the stout tenderize the beef? Round steak normally requires a low and slow braise or smoke to become tender. I typically use an acid like vinegar, wine or citrus to tenderize meat naturally.
That said, great caramelization on the beef. It looks like it has a deep, complex flavor.

The Stout did break it down a bit. The nice thing was that they were cubed small so they cooked pretty nice on the grill.
