First Off, these were awesome! I saw the idea on the Interwebs and wanted to run with it! Everything about this really came together well! Very Easy to make. The flavors of the Peppers and Onions really came through into the steak! Here is what you will need for the steak
3 Sirloin of Flank Steaks
1 Red Bell Pepper – Sliced
1 Green Bell Pepper – Sliced
1 Red Onion – Sliced
1 Bundle of Asparagus
Fresh Rosemary Diced
Start by pounding out the steak with a Meat Tenderizer till it gets to about a 1/4. The thinner it is the easier it will be to roll up.
Lightly rub both sides with Olive Oil
Sprinkle with Rosemary, Salt and Pepper
Lay a assortment of peppers, onions and Asparagus onto the steak.
Carefully roll it up and place a skewer through each end.
Go ahead and start making your glaze.
Place the rolls on the grill right on the edge of the coals. You will want to leave it alone untouched for about 5 or 6 minutes.
When you hit the 6 minute mark, go ahead and flip it. After about 5 more minutes, roll it one last time.
Remove them from the grill, and slice them in half between the 2 Skewers. Throw some wood chips onto the coals and place the rolls fresh cut side grate down and leave them on the grill for about 3 minutes to really get some smoke at the end.
For the Glaze:
1 teaspoon of Olive Oil
1 Clove of Garlic Minced
1/4 Cup Balsamic Vinegar
2 Tablespoons Red Wine
2 Teaspoons Brown Sugar
Fresh Diced Rosemary
1/4 Cup Beef Broth
In a pan on Medium Heat, heat up the Olive Oil and add the Garlic and cook for about a minute or so until you can really smell it cooking.
Add the Vinegar, Red Wine, Brown Sugar and Rosemary. Bring it to a Boil and reduce the heat and let it sit for about 5 minutes.
Add the Broth, Bring it back to a Boil, reduce the heat back down and let it Simmer for about 15 minutes.
I wish I would of added the glaze while I still had it on the grill to give it a chance to caramelize on the meat a little more, but instead I just added it on later.
The smell of the glaze cooking was incredible! The smell of the steak was incredible! They looked awesome and tasted awesome! I can’t wait to try these again!
