So recently purchased a Unii 3 Wood Fire Pizza oven! This thing is awesome. So powerful for it’s size! It’s taking some learning and some trial and error, but I’m getting the hang of it better and better every time I use it! There is going to be some “oopses” when you cook pizza at 900 degrees! I will post about it when I get better. But for this post, I wanted to try something different. We decided to give Ribeyes a try. Heres what we did.
We started by getting that oven cooking! It runs on just wood pellets, so once those get burning, it doesn’t take long for this oven to generate heat! Once it hit about 700 degrees (I use a Thermal reader to figure that out), I slid my Cast iron Pan in to heat up. While that’s going, time to prep the steaks. Just a little bit of oil and some sea salt to start with.
Once that oven reaches a temp of about 900 degrees, you should start to see that pan smoking a little. Go ahead and pull the pan out and throw the ribeye in. Place it back in the oven, close the door and let it sit for 2 minutes. At the 2 minute mark, go ahead and pull it out and flip it. The original recipe called for a very complex pad of butter to be created but I just did a basic pad with some onion and garlic powder. Place the pad on the top of the steak and place it back in the oven for about 3 minutes. At the end of that time, it should be a nice Medium Rare. If you like it done more, leave it in for another minute or so.
Pull the steak out and let it rest for a few minutes. You won’t have the cool grill marks like you would get on your Weber, but it gives it a very nice looking sear from the cast iron. After it rests, I sliced it thin and people just destroyed the steaks! So good! It’s always nice to have a new and different way to make a Ribeye delicious!
