I’m always on the hunt for new ways to cook fish and I have always been intimidated to try and successfully grill. You hear the horror stories of it burning, falling apart, making your grates forever taste like fish ect. So I have typically skipped most methods until now. As I was scouring friends posts on Facebook, I saw a genius idea someone had shared that I wanted to try. It looked so simple and after doing it, it really was. I am not sure I will ever cook fish any other way ever again! Here is what you will need
- Your Favorite Type of Fish – I recommend sticking to White Fish
- 5 or more lemons thinly sliced (about a 1/8″ to 1/4″)
- Your Favorite Rub
- A Little Oil
Start by getting your Grill going.
While this is happening, go inside and slice your lemons, and pour a little bit of oil om the fish and rub them with your favorite rub.
I used this awesome pretzel rub. You should look it up! It is incredible! The pretzels are called Dot’s and they are made in North Dakota.
Once the coals are hot or your chimney is ready, go ahead and dump or move your coals over to one side of the grill. Let the grate heat up and start laying your lemons in a row on the opposite of the coals with a slight overlap with each layer. Once you have those lemon slices laid out, go ahead and place your filets right on top.
The original cooking temp called for a steady temp of 225 degrees for about 25 minutes. I just left my grill uncovered for the 1st half of the cook and covered it with the vent right over the fish for the second half.
At the 24 minute mark, I pulled them. The combo of the rubbed fish and cooking lemon was to much to handle! It smelled so good. The fish cooked awesome! The top and edge had a really nice crust to it, the inside was super moist and the whole filet had a really great lemon flavor to it. I could make this every night! So easy! I am thinking some catfish with Cajun seasoning, or lemon pepper for the meek would be really good done this way! I will let you know if I do!

That looks delicious.
I’ve had some luck with cast iron skillet on the grill. Let the skillet get nice and hot, then add the fish and cook for a few minutes. Keeps it from falling apart.
Lemons are also a great idea!

I will share this with my husband, the griller in our house. He grilled tuna steaks last evening and I think this lemon idea would work great for those. This is one of the most novel ideas I’ve seen for grilling. Thank you for sharing this.
