Grilled Lime Chicken On A Bed of Lemons

This is my new favorite way to grill chicken and fish! It keeps the meat so moist, it doesn’t burn, you get a great lemon flavor, the lemons smell awesome when they start getting hot, and you literally do nothing once you put the lid on.

I made a pretty simple marinade for this chicken

  • 1 Teaspoon Salt
  • 1 Teaspoon Chilli powder
  • 1 Teaspoon Paprika
  • 1 Garlic Clove Minced
  • Oil – About a 1/8 of a cup
  • 2 Small Juiced Limes

Combine all that stuff into a bowl and add in about 2 lbs of boneless chicken breasts. Mix it up and throw it in the fridge for about 2 hours.

After about a hour, go out and start that grill cooking.

While that is going, slice your lemons about a 1/8″ thick. I used 7 lemons for this.

Once the coals are ready, put them to one side of the grill, and lay your lemons on the other side in slightly overlapping rows.

Once you have those laid out, lay your chicken breasts flat on top of the lemons, cover the grill and go about your day!

In about 20 minutes, go out and lift the cover. Your grill should be around 550 degrees (If you had all the vents open), and your chicken should be about 160 degrees! Pull it off and let it rest for about 10 minutes.

You don’t get the char marks, but if that is what your after, just throw the breasts right on top of the grate above the coals for a bit!

It’s such a neat way to cook chicken! I didn’t think it was going to work as well as it did. I would still throw it over the coals at the end to get it a little more charred up

I didn’t think it was going to work as well as it did! I for sure prefer the fish on it to the chicken
