1st Attempt @ Cast Iron Burgers In My Wood Fire Pizza Oven

So I’m trying to branch out with this pizza oven. The idea of grilling things at very high temps intrigues me. For this round, I tried doing burgers inside of a Cast Iron pan. They were good, but I feel like they could of been better. Here is what I did.

I got my Unii 3 Wood Fire Pizza Oven up to a high temp, roughly 850 degrees.

1 lb of 80/20 Burger made into 2 patties lightly coated in Oil and seasoned to your preference.

Once the Pizza Oven hit a temp of about 850 degrees, I slid the pan in and closed the door to let it heat up.

I left it in there for about 5 minutes and pulled it out once it starts to smoke slightly. I pulled it out and set the 2 burgers in side by side.

I put it back into the pizza oven and closed the door for 2 minutes. After 2 minutes, I pulled it out and flipped the burgers. I continued to do that about every 3 minutes or so until it hit 150 degrees.

Then I coated the burger in Mozzarella and threw it back in for another minute and a half so the cheese could melt nicely.

Once the cheese melted, I pulled them out and let them rest on the counter for a few minutes.

While they rested, I made a homemade Burger Sauce very similar to a Big Mac Sauce. Real Quick, Real Easy.

  • 1/2 Cup of Mayo
  • 1/8 Cup of Ketchup
  • 3 TableSpoons of Sweet Pickle Relish
  • 1 teaspoon of White Vinegar
  • 1 teaspoon White Sugar
  • 1 Teaspoon of Black Pepper
  • 1 Teaspoon of Tobacco – Optional but I like some heat

Mix it all together in a bowl. Use immediately or chill. This is basically Thousand Island Dressing, but I still Like it.

Throw it on the burger with your favorite toppings and enjoy!
